Apricot Slice

Discover a delightful treat that combines the rich, buttery flavor of shortbread with the sweet tanginess of apricot jam. This easy-to-make slice is perfect for afternoon tea or as a crowd-pleasing dessert.

Ingredients

  • 1 Jar of Apricot Jam
  • 250g softened butter
  • 1/2 cup castor sugar
  • 1tsp vanilla bean paste
  • 250g plain flour
  • 120g ground semolina or rice flour
  • 150g diced apricot (soak in boiling water for 1 hour, then drain)

Method

  1. Cream the butter, sugar and vanilla
  2. Add the flours
  3. Press 1/2 dough into a slice tin
  4. Spread over the apricot jam and diced apricots
  5. Top with the rest of the dough
  6. Sprinkle with castor sugar
  7. Bake in 180 degree oven for approx. 20mins or until golden

Serve with whipped cream.  Enjoy!!
