Lamb Kasoundi with Vegetables (Slow Cooker)

Lamb Kasoundi is a rich, aromatic dish that brings bold Indian-inspired flavors to your table. Made with Cunliffe & Waters’ Tomato Kasoundi, this slow-cooked lamb is infused with a perfect balance of spice, tang, and depth. Serve it with rice, naan, or a fresh salad for a warming, flavorful meal.

Please note: You can use any vegetables you like!

Ingredients

  • 1 jar Tomato Kasoundi
  • 1kg diced lamb shoulder
  • 1 diced carrot
  • 1 diced zucchini
  • 1 diced red or green capsicum
  • 1 small diced sweet potato
  • ½ cup puy lentils
  • ½ cup chopped coriander

Method

  1. Place all ingredients into your slow cooker on high.
  2. Cook for approx. 6-8 hours.
  3. Serve with Basmati Rice, Greek Yogurt, Lime and Date Chutney, garnish with coriander.
