Mandarin Marmalade Syrup Cake

This Award Winning Mandarin Marmalade Syrup Cake is a beautifully moist and citrusy treat, bursting with the bright flavors of Cunliffe & Waters’ Mandarin Marmalade. This golden cake is soaked in a fragrant syrup, enhancing its rich, zesty sweetness. Ingredients
- 1/3 cup Mandarin Marmalade
- 4 imperial mandarins
- 1 cup castor sugar
- 5 whole eggs
- 1 cup almond meal
- 1/3 cup GF self raising flour
- 1/4 cup boiling water
Method
- Process the mandarins peel as well
- Beat whole eggs with 1 cup of sugar till light and fluffy
- Add almond meal, flour
- Then add the mandarin puree, fold in gently
- Place into glad bake lined spring form tin and bake for 40 mins on 180 degrees
- When cooked remove from oven
- Mix the marmalade and boiling water
- Pour over hot cake
- Garnish with almond Flakes
