Mandarin Marmalade Syrup Cake

This Award Winning Mandarin Marmalade Syrup Cake is a beautifully moist and citrusy treat, bursting with the bright flavors of Cunliffe & Waters’ Mandarin Marmalade. This golden cake is soaked in a fragrant syrup, enhancing its rich, zesty sweetness. Perfect for afternoon tea or as a delightful dessert, serve it with a dollop of cream or a sprinkle of toasted almonds for an extra indulgent touch.

Ingredients

  • 1/3 cup Mandarin Marmalade
  • 4 imperial mandarins
  • 1 cup castor sugar
  • 5 whole eggs
  • 1 cup almond meal
  • 1/3 cup GF self raising flour
  • 1/4 cup boiling water

Method

  1. Process the mandarins peel as well
  2. Beat whole eggs with 1 cup of sugar till light and fluffy
  3. Add almond meal, flour
  4. Then add the mandarin puree, fold in gently
  5. Place into glad bake lined spring form tin and bake for 40 mins on 180 degrees
  6. When cooked remove from oven
  7. Mix the marmalade and boiling water
  8. Pour over hot cake
  9. Garnish with almond Flakes
