Mango & Pineapple Chutney Chicken Baguettes for the perfect Ladies Lunch!

Ingredients

  • 2 Cups Shredded Chicken
  • 2 Tblsp of Mango & Pineapple Chutney
  • 2 Tblsp of Whole Egg Mayonaise
  • 2 Tblsp of Sour Cream
  • 1 Stick of Celery Thinly Sliced
  • 1/4 Cup of Toasted Slivered Almonds
  • 1 Crusty Baguette
  • 1 Cos Lettuce

Method

  1. Mix the chicken, mango & pineapple chutney, sour cream, mayonnaise, celery and almonds into a bowl.
  2. Cut the baguette into approx. 8 pieces (2 inches wide).
  3. Wash the cos lettuce cups and dry off.
  4. Place the cos lettuce cup inside the baguette, add the chicken and mango and pineapple filling.
  5. Enjoy!
