Spiced Carrot Pickle Cous Cous Salad

Spiced Carrot Pickle Couscous Salad is a vibrant and zesty dish that brings together the earthy flavors of couscous and the bold, tangy kick of Cunliffe & Waters’ Spiced Carrot Pickle. It’s the perfect side dish or light meal to complement any occasion!

Serve with marinated chicken or slow cooked lamb!

Ingredients

  • 2 tbsp Spiced Carrot Pickle
  • 200g Pearl Cous Cous
  • 200ml Boiled Water
  • 1/4 tsp Salt
  • 1 tbsp Olive Oil
  • 1 handful of chopped Coriander
  • 1 handful of chopped Parsley
  • 1/4 tsp of Sumac
  • 2 tbsp Toasted Flaked Almond
  • 1/4 tsp of Vegie Stock powder

Method

  1. Bring the water to the boil, add cous cous, salt and vege stock simmer for 8 mins lid on or until the cous cous is cooked.
  2. Stir through the olive oil and sumac.
  3. Allow to cool.
  4. Add the carrot pickle and herbs.
  5. Garnish with almonds.
  6. Enjoy!
