Tomato Kasoundi Chicken Curry

This easy delicious curry will impress any crowd. Simply serve on a bed of rice and garnish with coriander. Enjoy!
Serves 4. Approx cooking time 25mins.
Ingredients
- 1 Jar of Tomato Kasoundi
- 320ml Water
- 200ml Coconut Milk
- 2 Diced Chicken Fillets skin off
- 1 Cubed Potato
- 1 Cubed Carrot
- 1 Handful of Snow Peas
- 1 Handful of Coriander
- 1/4 cup Toasted Almonds (optional)
Method
- Add the jar of Tomato Kasoundi to a non stick pot
- Add water, potatoes and carrot, simmer till soft - lid on
- Add coconut milk and diced chicken - medium simmer for 5 mins lid off
- Add snow peas simmer for 2-5 mins lid off
