Ingredients
- 50g Willamette Raspberry Jam
- 125g Butter
- 1/2 cup Brown Sugar
- 1/2 cup Castor Sugar
- 1/2 tsp Vanilla essence
- 1 Egg
- 1 3/4 cup SR Flour
- 1 cup Shredded Coconut
Method
- Process the butter and sugars till creamy
- Add vanilla
- Add egg process till blended
- Add flour and coconut
- Process till cookie dough forms
- Line two large baking trays with baking paper
- Preheat oven to 180 degrees
- Roll dough into balls
- Press a hole in the centre - don't go through the dough
- Place a small amount of jam in the centre 1/2 tsp approx.
- Bake for approx. 15 mins or until golden
