Aubergine and Chilli Pickle

This fiery hot pickle with large soft pieces of aubergine is wonderful mixed with Greek style yogurt and coriander as a dip. Great on a pizza, use as a marinade, stir through cous cous or add to a tuna and cheese toastie!
